Chicken
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and freshly ground black pepper, to taste
Cherry Filling
- 1 cup Cherry De-Lite Dried Montmorency Tart Cherries, roughly chopped
- 4 oz goat cheese, softened
- 2 oz cream cheese, softened
- ¼ cup chopped pecans
- 1 tablespoon honey
- 1 teaspoon fresh thyme leaves
- 1 clove garlic, minced
Honey Balsamic Glaze
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
Garnish
- Fresh thyme sprigs
- Extra chopped Cherry De-Lite dried cherries
- Chopped pecans (optional)
?? Directions
1. Prepare the Chicken
Preheat oven to 375°F.
Using a sharp knife, carefully cut a pocket into the side of each chicken breast without slicing all the way through.
2. Make the Filling
In a medium bowl combine:
- Cherry De-Lite Dried Tart Cherries
- Goat cheese
- Cream cheese
- Chopped pecans
- Honey
- Fresh thyme
- Garlic
Mix until well combined.
3. Stuff the Chicken
Fill each chicken breast generously with the cherry mixture.
Secure with toothpicks if needed.
4. Season
Brush both sides with olive oil.
Season with:
- Garlic powder
- Onion powder
- Paprika
- Salt
- Pepper
5. Sear
Heat an oven-safe skillet over medium-high heat.
Sear chicken for about 2–3 minutes per side until lightly golden.
6. Bake
Transfer skillet to the oven.
Bake 20–25 minutes, or until the chicken reaches 165°F.
7. Make the Glaze
While the chicken cooks:
Whisk together:
- Balsamic vinegar
- Honey
Simmer over low heat for 3–4 minutes until slightly thickened.
8. Finish
Drizzle the warm honey-balsamic glaze over the chicken.
Sprinkle with:
- Fresh thyme
- Extra dried cherries
- Chopped pecans
Serve immediately.
